do you know of any resources where I can learn this part of the workflow ?

Lee demo this workflow in several of his classes here on Lowepost. You simply bring the log shot into Fusion or whatever compositing app you are using and key under a LUT. Apply the LUT, key the shot and remove the LUT when you're done and ready to render. It's nothing else you need to know really.

How do I deliver a color corrected images so it can be easier to key?

That's not your problem, they will apply whatever transform is necessary before they do their keywork and remove the transform when sending the file back to you.

Should the HDR Colour Space and Gamma submenus be set to the Timeline colourspace (default) or is the tool more accurate if it is set to the Input / camera Colour Space .

The color space and gamma should be set to match your camera, so if you work with Alexa it should be set to Arri Alexa + Arri Log C. If your timeline is set to Alexa you don't have to change, but if your project is set up to something else you need to change.

Do you have any courses on here that you recommend?

I do recommend the Professional Color Grading Course by Kevin.  You need the very basics there as well, but it takes you through how to best approach exposure and balance and that's what you need to get started. If you have no clue about how to ingest footage, what the different wheels does etc, you should go see the basic training videos released by BlackMagic Design.

Thanks for still having this course available! Any chance of getting the videos at a higher resolution? It's hard for me to see the details.

Very detailed and crisp here, sometimes Safari blur videos a bit. Can you check Chrome?

I have heard from this video that you can or should grade in REC709 then if needed expand to HDR later for deliver if needed.

Just to make sure you are using the correct phrasing to avoid confusion... the display color space should be set to rec709 but he recommends that you set the working colorspace (timeline colorspace) to Arri Log C.

-is there a reason we use bouncing (which I understand as shifting the lift and gamma in different directions to create an intended colour which is a mix of the two) versus simply using offset?

Benjamin, If you decided to build on the look you have there by adding more cold into the shadows and warmth into the midtones, what controls would you use? That you can get to the same place with two different tools doesn't mean it's always like that.
